Easter bunny cut up cake

Every year my mom asks me to do the Easter bunny cake for Easter. Not a big deal. This year it will be interesting juggling a cake and a baby and church and baptism and such all in a row. Are you still looking for a dessert for Easter, especially one that the kids will go Ga ga over? I’ve got the perfect one for you.

This should give you an idea as to how to cut up the cake (get it, cut up cake!) basically instead of doing a 9×13 you do 2 round cake pans. I suggest if you don’t have them already, that you use Wilton. They are the premier cake makers and make pretty darn good products, including pans, frosting colors, etc. They also make all the decorating essentials to go along with them.

You bake the cake, cut up the cake and put it on a bigger pan, then frost as usual and add ‘decorations’ to the bow tie, and make it look like a bunny. The original recipe suggests coconut, but I don’t care for it, so I typically leave it off. The reason it’s good for kids is because most of the cake has candy on it, and they can choose an ear, bowtie, or eyeball and make everyone pretty happy.  Suggested candies: licorice for the whiskers or mouth, jellybeans or m and ms for the bowtie, extra frosting and small candies for the mouth and nose. I’ll try and post a picture of this year’s bunny for your enjoyment. In the meantime, have a great Easter everyone!
